Tasty Snail Recipes

Snail Omelette

Ingredients

  • 50 Petits-gris snails
  • Salt and pepper Fennel
  • 1 Dried fig leaf
  • 6 Eggs, separated

Method

  1. Starve the snails and clean them well.
  2. Cook them for 1 hour in boiling water with added salt, fennel and a fig leaf
  3. drain and remove them from their shells.
  4. Prepare an omelette mixture. Beat the egg yolks and fold in the stiffly beaten whites.
  5. Make an omelette in the usual way and fill with the snails.

Snails Bourguignonne

Ingredients

  • 24 Large Paris mushrooms
  • Salt and pepper
  • 1/2 c Oil
  • 100 Canned Burgundy snails
  • 1/2 c Snail butter

Method

  1. Remove the stalks from the mushrooms.
  2. Season the mushroom caps with salt, pour the oil over them and sweat them in the oven.
  3. Take the mushroom caps out and place 4-5 snails in each one.
  4. Cover with snail butter and heat in the oven just before serving, exactly as you would snails in their shells.
